Meet the head chef: Didier Laminette
Didier grew up in France where he developed over the years a passion for cooking traditional and gourmet French cuisine. Dedicated to his hobby, he studied and earned his culinary degree in Classical French cooking in Paris.
Didier has worked for prestigious restaurants such as the “Four Season’s” Palace Hotel George V and the Royal Monceau Palace both in Paris. Didier has also worked in London where his first position as a Head Chef for Roux Fine Dining managing a team rich in culinary and front-of-house skills.
Two years later, Didier embarked on a life on board and joined M/Y APPLAUSE, since then has never looked back and loves his life at sea! Didier has previously worked on yachts as M/Y ST NICOLAS, M/Y SECRET, M/Y SOLEMAR to name just a few. He has travelled extensively including the Netherlands, USA and Europe; learning new recipes wherever he goes!
In his free time, Didier has created a digital recipe book called UMAII and he has put to good use his skills as a culinary photographer. Didier is well versed in every aspect of the culinary arts and will be sure to surprise and delight the most discerning of guests!
